bike ride.

Last night was a great night for a bike ride. After work I got ready and headed outside for a ride. I went over the Stone Arch Bridge and took the trail along the lightrail to the Greenway. I followed the Greenway over to Lake of the Isles, did a loop, and then headed back home. I just used Google to check the distance - it was about 17.5 miles. Lovely!

hot.

It's apparently SO HOT in my cubicle that chocolate will melt. I have a candy dish full of Lindor Truffles and the dark chocolate and peanut butter centers have turned to liquid. You have to eat the truffle in one bite - it's either that or get runny chocolate all over yourself and your desk.

Lately, I'm all about new recipes. Here are a few that I have tried recently.

Spring Risotto with Peas and Zucchini
I served this with garlic chicken and it was a hit. The leftovers were good too.

Beef Noodle Bowl
This was pretty tasty but it was tricky to get an even ratio of noodles, veggies and beef in each serving.

Maple Sour Cream Walnut Muffins
A huge hit at the office on Monday morning!

bunny cake.

I had it in my head that I should make a bunny cake for Easter. I found some ideas online and then I woke up on Saturday morning and started baking! I made two 9 inch round cakes using a box cake mix. After the cakes cooled, I cut them to make two layers from each cake. It was a little tricky to make an even cut across the length of the cake.

Meanwhile, I made raspberry filling using this recipe. I think I should have drained the raspberries so to compensate I added extra cornstarch.

After the raspberry filling had cooled in the refrigerator I spread it on the cake. Then, I cut one of the 9 inch cakes to make the bow tie and ears.

I used one container of whipped frosting plus one container of cool whip to cover the entire cake. A little bit of food coloring was added at the end to highlight the bunny ears.


Then I used jelly beans and licorice to make the bunny face and decorate the bow tie.

My family was desperate to start eating the cake on Saturday night. I wouldn't let them have a sample before Easter and they didn't like that too much. We enjoyed the cake with an ice cream cake from dairy queen on Sunday after our ham dinner.

I have a mild obsession with the Gold Medal Flour sign at the Mill City Museum. It's a great symbol for the area by the beautiful Mississippi River. And at night - the words light up one by one in a repetitive pattern. It's glorious.

These pictures were taken from the Guthrie Theater. The yellow-hued photo is from Level 9 (or is it Level 8?) of the Guthrie. It's the part of the building that is a big yellow box. The windows are floor to ceiling yellow and create a crystal clear image of the surrounding area. Next time you are there you should check it out.

movies on vacation

I never want to be the type of person who goes on vacation and then while on vacation goes to see a movie at a movie theater. I'm sorry, but you can see a movie at home when you have nothing else do to. Why would go see a movie when you are in a new and exciting place?

There might be an exception to this rule of 'no movies while on vacation'. If it's raining and you absolutely cannot go outside and do some exploring then maybe you could go see a movie. However, I think your time would be better spent creating a scavenger hunt in the rain and meeting strangers along the way. OR you can watch a movie while you are on vacation if you are on a plane. These are the only two exceptions.

And then, when you return from a vacation where you went to see a movie... don't let that be the first story you tell about the trip. Furthermore, don't try to tell everyone else what happened in the movie. Don't be a scene spoiler!

Here's my list of 25 random things.... I also posted this on facebook.

1. I am always early. Always. This only means that I spend a lot of time waiting. I wish I could add up the time I spend waiting and use it for something fun.

2. I like to have plans.


3. Owning an airstream camper would be fun.


4. I don’t like to wear red.


5. I fell down a mountain at Glacier National Park. It’s still my favorite National Park and I want to go back there to camp.


6. I want to go to New York City for Thanksgiving. I want to see the parade and ice skate at Rockefeller Center.


7. I have a collection of 2 Dollar Bills. My Grandma used to send them to me for Valentine’s Day.


8. One time I drove a friend crazy with the song, John Jacob Jingleheimer Schmitt. Sorry Krissy!


9. My memory is horrible. I don’t actually remember a lot from when I was little. I mostly remember things from pictures. My Mom has a really good memory.


10. I'm going on a trip to Washington, DC with about 40 other women this summer. We are taking a bus!

11. I would like to go on a bicycle trip across the United States. It would be great if I could get outside today for a ride. Is it summer yet?


12. I don’t use table salt on my food. If a recipe calls for salt I am likely to omit it completely.


13. My goals for 2009 include the word: simplify.


14. My roommate is always the big spoon.


15. I’m really excited to be an Aunt.


16. I ate meals outside this past weekend. I was in San Diego!


17. The Great Smoky Mountains National Park is on the top of my list of parks to visit. It’s Kelly’s favorite park and I haven’t been there yet.

brain freeze.

The temps are frigid today and my mind wandered into thoughts of all things summer. Don't get me wrong - I don't mind the winter and snow. I can enjoy the snow. It's the brutal cold temps that I loathe. But back to all things summer - just imagine yourself at sunset waiting in line at Belt's for a fresh raspberry sundae. Ahh... that hits the spot!

Happy New Year 2009.

Looking back...
2008 was a pretty good year. Here are some highlights.

I went to 21 music concerts. It's hard to pick which ones were the best because they were all so very good. The Hotel Cafe Tour at the Fine Line in March was incredible. Over two hours of constant music and I was in the front row. I went to the Cabooze for the first time in the summer to see Heidi Newfield. Her voice was so strong. Brandi Carlile put on a free show at the State Fair. She shared her passion and we rushed to the stage at the end of the show. Then I saw Journey at the Target Center. Despite the big venue I was impressed and loved the energy of the new lead singer. And what about Gaelic Storm? I only saw them once in 2008... but it was probably my favorite performance of theirs. The show was at the Guthrie on St. Patrick's Day. Hard to beat.

In July I spent a week on family vacation in Montana. Ah... Yellowstone National Park was just lovely. It was on the top of my list of National Parks to visit so I can cross that one off now.

On August 10th I turned 28 and celebrated the birthday with my Grandma, who turned 83.

Over the summer I ventured up north three times. Memorial Day and Labor Day were spent with family at the cabin by the Willow Flowage. I was with friends for the 4th of July near Brainerd, Minnesota.

I traveled a bit for work this year - to Nashville and Indianapolis and then to South Dakota. I managed to swing by Mount Rushmore and get a few good pictures.

The year ended with the holidays in a bit of a flurry. Everyone was at home in Edgar for a very white Christmas. Poor Grandma fell and broke her hip on Christmas Eve.

It's hard to believe all of these events, and many more, all fit into one year. My life is so full of family, friends, and adventure. I know how fortunate I am to be blessed with all of these things.

I'm excited for 2009!

There are several blogs and websites that I read regularly. One of the things I have read is about the little word concept. Basically, you pick a word and then it's something for you to focus on throughout the year. I'm not sure I'm committed to choosing a word for 2009. It's hard to pick just one word. So... here are a few words for me for 2009.

I don't really make new years resolutions. Rather, I like to set goals for each year. I've only started this list in my head right now and have yet to put anything on paper. I really want to buy a fancy new journal to write in and plan to put the goals in there.

My mind keeps thinking about decorating the Christmas tree. Is it Saturday yet? My favorite type of ornament is like the one pictured here. Glass ornaments from Christopher Radko.

Now, certainly I do not need the originals because they are (in midwestern speak) a little spendy. A couple of years ago Target carried an inexpensive line of Christopher Radko ornaments and I was sure to scoop up a bunch of them. I love getting out my decorations and unwrapping each ornament from it's tissue paper. It's like a magical secret just waiting to be re-discovered each holiday season.
